Welcome to Mumbai Masala! We present some of the more characteristic, yet legendary Indian dishes. The north Indian Kormas with their savoury sauces, kebabs and tandoori dishes, complemented by homemade bread such as Chappatis, Parathas and Naan are world renowned.
Southern India dishes are hotter than Northern dishes with a preference for steamed dishes rather than barbequed tandoori, and the favourite beverage in Southern India is freshly roasted ground coffee. Indian villagers still use the traditional mud stoves and clay ovens, fed with coal or firewood, giving the food special smoked flavour. One such oven is the "Tandoor", which we use to cook our Tandoori dishes - the food is prepared first in a special marinade, then spiked on long metal rods and inserted into the oven for roasting.
The variety, combinations and the myriad of use of herbs and spices, used since ancient times, are what distinguishes Indian cooking from any other cuisine in the world.
